Waubs Harbour Tokay Cask Finish Australian Single Malt Whiskey (500ml)

This beautifully decadent maritime whisky is the result of a unique, ongoing collaboration between Head Distiller Rob and our Cooper, Laurie, enabled by our on-site Cooperage.

Rob had approached Laurie looking for something special to pair perfectly with our viscous and flavourful Waubs Harbour spirit, looking for a particular flavour profile. Laurie found just the thing.. A beautiful, old Tokay cask.

When Rob and Laurie popped the head off the barrel, the walls dripped in rich Tokay syrup and it smelt like ripe fig and dried pear. The cask was then coopered on-site, working together to shave, toast & char the cask to enable the perfect maturation conditions for the whisky Rob set out to make. It was then filled with whisky firstly matured in Apera casks, to be finished in this special French Oak Tokay cask.

The result? A beautiful maritime whisky with notes of poached pear short crust pie, fig, baked walnut and salted
caramel. Yum! Only 661 bottles in the entire release.

• Nose: Light pear, malt and oak. Pear is poached, malt is shortcrust pastry, oak is spices like cinnamon, anise, raisin or sultana spiced syrup.
• Palate: Poached pear syrup, juicy sultana and spice mix of cinnamon, almond, nuttiness, baked walnuts, caramelised fig and salted caramel.
• Finish: Deliciously buttery, pear syrup and wood oak spice profile. Long and delicious finish.
